Nothing Goes to Waste: How Zancudo Became One of Mexico’s Most Sustainable Mezcal Brands
There is a tradition in mezcal production that many producers defend passionately, and that we have chosen to walk away from entirely.
It is the use of the heads and the tails.
Understanding the Distillation
When mezcal is distilled, the liquid that comes off the still is not uniform. It arrives in three distinct phases, each with a different chemical composition:
The heads — the first fraction to emerge — contain a high concentration of methanol and other volatile compounds. They are harsh, pungent, and potentially harmful to human health.
The heart — the middle fraction — is where the magic lives. Clean, refined, expressive. This is what Zancudo bottles. Only the heart.
The tails — the final fraction — are heavier, oily, and contain compounds that muddy clarity and shorten the finish. Some producers blend tails back in, arguing it adds character. We respectfully disagree.
Our commitment has always been to elegance, cleanliness, and refinement in the glass. That commitment begins at the still.
What We Do Instead
Rather than discarding the heads and tails, or worse, bottling them and calling it flavor, Zancudo developed a full sustainable production program — one that, to our knowledge, makes us among the first mezcal brands in all of Mexico to implement this at scale.
The heads and tails are collected and fed into a biodigester.
What Is a Biodigester
A biodigester is a sealed system in which organic material — in our case, the methanol-rich heads and tails from distillation — is broken down by anaerobic bacteria in the absence of oxygen. Over time, this process produces two distinct outputs:
The first is a natural liquid fertilizer. Rich in nutrients, completely organic, and safe for agricultural use. We donate a significant portion of this fertilizer to local farmers, and we use the rest on our own agave fields, completing a cycle that feeds the very plants that produce our mezcal.
The second is biogas — a natural combustible gas similar in composition to the methane produced in nature. We use this biogas to fuel our kitchens and cooking operations at the distillery. We also distribute it to families in the surrounding communities, giving them a clean, renewable energy source for cooking at home.
Instead of putting waste out into the world, we are feeding it back to the people who make Zancudo possible.
Why This Matters for What’s in Your Glass
The decision to use only the heart of the distillation is not just an environmental choice. It is a quality choice. The mezcals that have built Zancudo’s reputation in the market — approachable, refined, honestly priced for their quality — are the direct result of an uncompromising standard that begins with what we keep and what we do not.
A mezcal that uses heads and tails is a different mezcal than one that does not. You may not always be able to taste the difference immediately. But over time, the clarity of a spirit made only from the heart speaks for itself.
Quality and Responsibility Are Not in Conflict
There is sometimes an assumption in the spirits industry that sustainability is a luxury — something brands add on when they can afford to, but not a fundamental part of producing a great product.
We are evidence that this assumption is wrong.
The same commitment that drives our biodigester program drives our distillation standards. The same values that send our team into the fields to plant agaves by hand are the values that lead us to use only the heart of every batch we produce. They are not separate programs. They are the same program.
We make mezcal that is good for people and good for the planet. We believe you should not have to choose between the two. And we believe that when you reach for a bottle of Zancudo, you deserve to know that the people who made it took that responsibility seriously.
