This was one of them.
The Zancudo Ensamble was born from a question we had been carrying for years: what happens when you bring together three of the rarest, most time-demanding agaves in Oaxaca — not as separate expressions, but as one? What happens when you cook them together, ferment them together, distill them together, and let six generations of expertise guide every step of the way?
What happens, as it turns out, is something extraordinary.
the agaves
Each plant in this Ensamble was chosen not just for its variety, but for its age — for the decades it spent drawing minerals from the soil of the Sierra of Oaxaca, building complexity, character, and depth that cannot be rushed or replicated.
TEPEZTATE · 36 YEARS IN THE GROUND
One of the most rare and unpredictable agaves in Mexico. Tepeztate grows wild, on cliff faces and rocky hillsides, refusing to be farmed. It takes between 25 and 35 years to mature — and ours had been growing for 36. No cultivation. No shortcuts. Pure time.
JABALÍ · 15 YEARS IN THE GROUND
Named for the wild boar that sometimes uproots it in the mountains, Jabalí is notoriously difficult to work with. Its fermentation is volatile and unpredictable, often failing entirely. It demands experience, patience, and a master’s intuition to tame — qualities our family has spent generations building.
MEXICANO · 12 YEARS IN THE GROUND
Elegant, aromatic, and mineral. Mexicano brings structure and a herbal grace that acts as the backbone of the blend, giving the Ensamble its length and its finish.
the gamble
To distill these three agaves together — cooked as one, fermented as one, distilled as one — is not the conventional approach. Most producers work each variety separately and blend later. We chose to let them become one from the very beginning.
This was a significant risk. Any one of those variables could have gone wrong: the fermentation could have stalled, the Jabalí could have revolted, the balance could have collapsed under the weight of three powerful expressions fighting for dominance.
But this is where six generations of knowledge does what no manual ever could. Our family has seen things go wrong. They have learned the language of agave — its moods, its needs, its breaking points. And on this production, they read every sign, adjusted every variable, and brought all three agaves into harmony.
We wanted to show the world what we are capable of. This Ensamble is the answer.

The Zancudo Ensamble is an umami experience.
From the moment it reaches your palate, there is a tingling — a slow awakening of the senses that builds with each sip. It is savory and mineral, with a complexity that keeps revealing itself long after you have swallowed. It makes you salivate. It makes you want more. Not out of habit, but out of genuine desire — the kind that comes from tasting something that was made with purpose.
This is not a mezcal you drink quickly. It is a mezcal you sit with. You let it breathe. You give it time — because it gave you 36 years of its own.
what makes it unrepeatable
Three hundred and fifty-seven bottles. That is all there will ever be.
We did not hold back a reserve. We did not plan a second edition. This production exists as a single, unbroken moment in time — a convergence of three specific plants, harvested at the precise moment of their maturity, worked by the same hands that have been doing this for generations, and bottled in a quantity that reflects the reality of what was available and what was possible.
When these 357 bottles are gone, this Ensamble is gone.

the recognition
We entered the San Francisco World Spirits Competition for the first time in our history. It is the largest and most prestigious spirits competition in the world — the stage where the finest distilleries, with decades of submissions behind them, compete for recognition.
We submitted the Ensamble as our very first entry.
We won a Gold Medal.
We are proud — deeply, sincerely proud — in the way that only comes after years of sacrifice, uncertainty, and belief in something that many people told you was too difficult. This medal belongs to our partners, our families, and to every person who has stood in a field beside us in the heat of a Oaxacan afternoon.
But we also know that this medal is not the destination. It is a marker on a much longer road.
